Chocolate Mousse Parfait
10 ounces chocolate chips
1 (12 oz.) block of tofu, soft
3 tbs. honey
1 tsp. Vanilla extract
1 cup fresh or frozen berries of choice: strawberries, blackberries or cranberries
Place the chips & honey in a shallow, microwave safe dish. In a microwave on high, melt chips until creamy, about 2 minutes, stirring halfway.
In a blender or food processor, fold in vanilla & tofu. Add chocolate mixture. Blend all until creamy.
Spoon mixture into dessert dishes or parfait glasses. Chill overnight. Serve with berries on top.
Makes 8 servings.
